Easiest pick on my list would be an online Library.
A Swing Application fired up as a stand alone,
you'll be able to illustrate everything you've
learnt in Java and more. (Database connectivity
via either JDBC or Hibernate, GUI skills via Swing,
string manipulation skills on the book and/or
member searches, algorithm efficiency via searches,
etc - you could even go the extra mile, buy a
bar code scanner for about US$250 and incorporate
Java POS into the project).
