I got a question on how I produce the video screencasts, so I figured I'd give it an answer here, rather than in comments to the post itself:
I use IShowU to record the screen actions. It allows me to highlight mouse clicks as I go. Great application, and reasonably priced.
I use VisualHub to transform the large .mov file produced by IShowU into a smaller mp4 file. Very nice application, with a range of options for file output
I do use a headset to record the audio - that eliminates the "echo" from the stock Mac mic, and gets rid of ambient noise in the room to a large degree
